Skillet Zucchini and Mushroom Medley This delightful dish combines the fresh flavors of zucchini and mushrooms, enhanced by aromatic herbs and garlic, creating a perfect side or light main course. Ingredients: - 1 tablespoon olive oil - 3 tablespoons butter, divided - 2 small zucchini, cut into thin, half-moon slices - Salt and black pepper, to taste - 1 small yellow onion, finely diced - 1 pound small button mushrooms, cleaned and patted dry - 3 to 4 cloves garlic, minced - 2 teaspoons fresh chopped herbs or 1 teaspoon dried thyme and oregano - 1 cup vegetable broth - Chopped fresh parsley, for garnish - Grated parmesan, for garnish Instructions: 1. In a large skillet over medium-high heat, add olive oil and 1 tablespoon of butter. 2. Add the zucchini slices to the skillet, season with salt and pepper, and cook for 3 to 4 minutes, or until they are fork-tender. Remove the zucchini and set it aside. If there is any liquid, wipe out the skillet. 3. Return the skillet to the burner and add the remaining butter, melting it over medium-high heat. 4. Stir in the diced onions and cook for 2 minutes, until they are just softened. 5. Add the mushrooms to the skillet and cook for 5 to 7 minutes, stirring occasionally, until they are tender and nicely browned. 6. Stir in the minced garlic and herbs, cooking for 20 seconds until fragrant. 7. Return the zucchini to the skillet, mixing it with the mushrooms, and cook for 1 minute, or until heated through. 8. Pour in the vegetable broth and cook for 2 minutes, stirring occasionally. 9. Taste and adjust salt and pepper as needed. 10. Remove the skillet from heat and garnish with chopped parsley and grated parmesan. Serve and enjoy!

Cake mixes are such an easy thing to experiment with. Today鈥檚 experiment is a zucchini apple cake.聽

Preheat your oven to the temperature your cake box has directed you to use.聽

In this case, I used milk, eggs, oil, cinnamon, apples, and zucchini.聽

Add the cake mix, cinnamon, milk, eggs, and oil to a mixing bowl.聽

Mix for 30 seconds, or until just combined.聽

Then on medium speed for about 1 minute.

After your timer goes off, fold in your zucchini and apples.聽

Bake for the time on the box, according to the dish you are baking it in.聽

Once it is cooled you can eat it. This recipe and most cake recipes don鈥檛 need frosting.聽

Hey man, love all the zucchini recipes I've been seeing. Wanted to suggest zucchini brownies, they're like the cousin of zucchini bread but gooey and chocolatey!
Also straight up the healthiest brownie you've had in your life, but you won't care because they're that good.
2 cup flour
1/2 cup unsweetened cocoa powder
1 1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup vegetable oil
1 1/2 cup granulated sugar
2 teaspoon vanilla
2 cups shredded zucchini (like 1 or 2 zucchini based on size)
2-5 tablespoons Water
1/2 cup chocolate chips (or as your heart desires)
1/2 chopped nuts of your choice (I love toasted walnuts)
Preheat 350掳 usually I use a 9x12 baking pan.
First mix all the drys up!
Next (in a separate bowl) mix up oil, sugar, vanilla. Then add the drys to this bowl. Now it's gonna look way wrong, like sand, worry not. That's the way it's supposed to look.
Now add that shredded zucchini! I know I said 2 cups but if you have more you can always add some more. Mix it up and let it sit for like 10 minutes. If it's not fudgy looking at this point add some of those tablespoons of water, but you shouldn't need much if any of the water. The mixture should be really thick!
Okie dokie almost there, just oil the pan you're using and plop that mixture in. Bake that sucker for 25-30 min and enjoy some delicious brownies!
Now add your nuts and chocolate chips!
